Spinach muffins

Here’s a tasty recipe for spinach muffins that are nutritious and great for breakfast or snacks:

Ingredients:

  • 1 cup fresh spinach, chopped (or ½ cup frozen spinach, thawed and drained)
  • 1 ½ cups all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • ½ cup grated Parmesan cheese (or another cheese of your choice)
  • ½ cup milk (or dairy-free alternative)
  • 2 large eggs
  • ⅓ cup vegetable oil or melted butter
  • 1 teaspoon lemon juice (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder (if using), and Parmesan cheese.

  3. Prepare Spinach: If using fresh spinach, lightly sauté it in a pan until wilted. Allow it to cool, then chop. If using frozen spinach, ensure it's well-drained.

  4. Mix Wet Ingredients: In another bowl, whisk together the milk, eggs, oil (or melted butter), and lemon juice (if using).

  5. Combine Mixtures: Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the chopped spinach.
